Quite a few people are allergic to nuts, including almonds, so I tried replacing the ground almonds with rolled oats. I think I saw a recipe like this somewhere, but I couldn’t find it again so I made up my own. It is very simple:
- 200 grams salted butter
- 200 grams white or light-brown sugar
- 5 eggs (large free-range)
- 200 grams oatmeal (rolled oats)
- (optional) 1 teaspoon vanilla extract or beans from 1 vanilla pod – or – 1 Tablespoon Marsala or other fortified wine. – or – 1 Tablespoon Cognac, Calvados or other brandy – or – 1 Tablespoon lemon juice
Cream the butter and sugar thoroughly. It is important to blend them so long that they become light and creamy. I usually feel for the grit of the sugar by squeezing a bit between my fingers. The grain should feel very small and smooth.
Add the eggs one at a time, incorporating each before adding the next. Carefully fold in the oatmeal and any flavours according to your taste.
If you prefer the mass to be less moist you can add as much as 3 Tablespoons of flour to the above ingredients.
Bake for one hour in a prepared pie shell with fruit on top.
